Skinny Dip ~ Naturally Gluten Free Skinny Guacamole pictured with Pop Chips.
If you follow me on Facebook or Twitter, you know I'm a football fan. 

All autumn long, I scheduled errands around NCAA Saturdays, made sure I had my NFL Sunday Ticket, and settled in on Monday nights for... yes, more football. 

Now, the day football fans everywhere anticipate, Super Bowl Sunday, is only six days away! 

Even if you don't care for the game, I bet you're into the food. I know I am! I love serving healthy, naturally gluten free versions of "old favorites" everyone can enjoy at my Super Bowl Bash! 

Of course, because I don't want to miss a minute of the gridiron action, I like keeping it simple! 

My Skinny Guacamole is a definite "score" for your game day appetizer table... It's full of essential nutrients, lower in fat than it's traditional counterpart, quick to fix, naturally gluten free, and it tastes terrific!

You'll never eat mayo from the jar again!
Avo Mayo
1 ripe avocado
Juice of 1/4 lemon
1/4 teaspoon garlic powder
1/4 teaspoon black peper
1/4 teaspoon sea salt
3 Tablespoons light olive oil

Combine all ingredients except oil in the bowl of your food processor and blend until pureed. You will need to scrape down the sides several times to insure all avocado is pureed. 

When the mixture is smooth, drizzle the oil slowly into the processor while blending. Be patient - if you add the oil all at once or too fast, you will not achieve the rich creamy mayo-like texture that you're looking for.

Use immediately, or store in fridge for 3-5 days tightly covered. It may keep longer, but it never stays around my fridge long enough to find out.

Zesty Herbed Yogurt-Goat Cheese Dip

This dip is delicious and healthy, providing a low-fat source of bone-strengthening calcium – good for the bones, but also for other important functions such as muscle contraction and neural transmission – so enjoy this one guilt (and gluten) free!

1 c. non-fat Greek yogurt
½ c. crumbled goat cheese
1 t. lime zest, finely grated
1 T. fresh chives, finely chopped
1 T. flat leaf parsley, finely chopped

Stir all ingredients together in a glass serving bowl and chill for 1-2 hours prior to serving. 
Serve alongside your favorite gluten free crackers or crisps and fresh veggies, such as grape tomatoes, carrot sticks, and pepper slices.
