¾ c. white rice flour
¼ c. corn flour
2 t. baking powder
¼ t. salt
2 bananas, peeled & mashed
1 egg OR ¼ c. egg substitute (see egg alternatives here)
¾ c. sugar
½ t. vanilla extract
¼ c. chocolate chips OR ¼ c. chopped pecans (or both!), optional
Preheat your oven to 375º F; spray an 8x8-inch square glass baking dish with vegetable cooking spray.
In a mixing bowl, combine flours, baking powder, and salt; set aside. In a separate bowl, combine bananas, egg, sugar, and vanilla, and stir until well combined. Add the banana mixture to the dry ingredients, and stir until all dry ingredients are incorporated.
Pour into prepared baking pan, and bake for 25 minutes, or until center is set. Oven times vary, so keep an eye on it! Enjoy!
