During the Thanksgiving holiday, I was delighted to give Mixes from the Heartland a try! This company, located in Texas, consists of a facility that is over 30,000 square feet of dedicated food production space. This allergen-controlled factory is free of nuts, soy, gluten, wheat, eggs, and bean flours. Want more? Every product they use is ELIZA tested! And would you believe that MFTH products are all natural and have no preservatives?

After receiving a generous sampling of complimentary products from MFTH (thank you!!!), I was eager to get into the kitchen to try them! My family's favorite mix by far was the Minestrone Soup Mix. This soup is absolutely delicious, and SO easy to prepare! There are real freeze dried veggies that come to life when reconstituted - you just have to trust me on this, but these veggies were as good as fresh once the soup was prepared. Each package from MFTH lists detailed instructions for preparation, and even provides substitution options. The Minestrone Soup Mix is one that I am ordering, and will keep on my pantry shelf - all I needed was a large can of diced tomatoes and water, and voila, dinner was ready! I omitted the sausage called for and made this a vegetarian meal, and everyone loved it! This soup, along with my gluten-free cornbread, turned out to be our Thanksgiving Eve dinner - such a healthy meal the night before a big feast!

The morning after Thanksgiving, we started our day off in a simple, healthy way with Banana Flax Seed Bread! I made this ahead with a mix that makes two generous loaves. I was able to slice and freeze one so that we had a healthy grab-and-go breakfast when needed. The flavor was wonderful - you add 6 bananas to this mix (I thought this was a LOT to add, but it makes two loaves, so that makes sense), and I followed the directions for substitutions and used applesauce for the fat called for and egg replacer instead of real eggs. The bread turned out beautifully!

I was on such a convenience foods roll with these all-natural allergen free mixes that I decided I've be brave and try one for our Thanksgiving Day dessert. I made the Pineapple Pound Cake (substituted 1/2 cup all natural applesauce for 1/2 cup oil to reduce the fat just a bit). It was really tasty! I used a bamboo skewer to poke holes in the top (as you will see in the photo!) and added a vanilla glaze and a few cherries to make the cake more festive. I froze the leftovers in individual slices separated with wax paper, and they are as good as fresh baked when reheated.

I was happy to find that taste was not compromised with these healthy gluten-free mixes!
