Prompted by the need for a protein-packed recipe and using my baked oatmeal recipe as my guide, I baked up this jewel of a dish using quinoa flakes, and it is just too tasty to keep to myself!

To pack a real protein punch, I wanted to do something different - not the typical meat, poultry, or fish. Not even the beans & rice protein combo. I wanted something quick, easy, and kid-friendly. Something healthy without white sugar, and something dairy and egg free. I had my doubts about the quinoa flakes turning out as well as my gluten-free oats do in a similar recipe, but one bite and I was hooked! And you will be, too! The texture is ceamy and light, and the sweetness of the honey really comes through, with no overpowering quinoa flavor.

Give this one a try for breakfast or for "brinner" (breakfast for dinner), which is a favorite in my house! Enjoy!

Gluten Free Baked Quinoa
also dairy free, egg free, nut free, soy free


2 cups quinoa flakes
1/2 cup honey
1/2 cup unsweetened applesauce
2 eggs (or 1/2 cup egg substitute)
Juice of 2 oranges
1 cup rice milk
3 Tablespoons currants, raisins, or other dried fruit
1 teaspoon baking powder
2 Tablespoons olive oil
1 teaspoon vanilla
1/2 teaspoon cinnamon
Pinch salt

Preheat your oven to 350 degrees.

In a 2-quart glass baking dish, combine all ingredients and stir. Yes, in the dish. With no greasing. Just put it right in there and stir until it is well-blended, then pop it into the oven and bake for approximately 30 minutes. The edges will have a slight golden color, and the center will apper to be set and have a drier appearnace when the quinoa is done. This is excellent with scrambled eggs and fruit.

A friend of mine told me a few years ago that she uses quinoa instead of oatmeal in a baked oatmeal type recipe. Now I see what that would look like. It's a great idea. And breakfast for dinner is one of our favorites too.

Gigi! This baked quinoa looks amazing! I have made baked Oatmeal many times, but I love the idea of making it with the quinoa. I am going to make this this weekend for my family! What a great weekend treat!

Hi, Kim! I love baked oatmeal, too. I make it on weekends, have leftovers during the week. I just had those quinoa flakes in the freezer, needed a high protein dish, and voila! An idea was born. :) Let me know how you make yours this weekend and how it turns out. I absolutely LOVE the texture - it's so light, yet extremely filling. Based on the texture, I'm thinking of a "cinnamon roll" type baked quinoa next.

I just tried the baked quinoa and it was really tasty. I substituted maple syrup for the honey and gogi berries for the raisins. What an excellent find. Thanks so much.

JillAnn,
I purchase my quinoa flakes at Whole Foods Market - they are not with the regular quinoa, but instead they are shelved with the breakfast cereals and oats. Regular quinoa would not yield the same result in this recipe. I hope you find the flakes near you. I'm sure they would be available at natural foods stores.

Yummy!!! I make all sorts of things with quinoa, but have never used the flakes before. I think I'll pick some up the next time I'm at the co-op and try this dish.

I'm so happy that you stopped by to comment! I have been reading your "about" page as well as browsing through your awesome recipes, and I can tell you, I'll be visiting your site often. The Quinoa Millet Bread looks divine, and I will be giving that recipe a try very soon, perhaps making an "egg-free" attempt.
As far as quinoa flakes, I love them, and there are so many variations of this Baked Quinoa that one could create.

I have made baked oatmeal and love it. I have never tried quinoa flakes before, but this has convinced me that I need to get some! It sounds delicious!
