While I had my doubts back in January whether or not we would ever see spring again, there is certainly no doubt that the season of new beginnings has arrived (at least here in the south)! Through open windows I can hear the medley of mocking birds sitting on my chimney along with hurried chirps from blue birds doing their spring cleaning in the houses my daughters built years ago.

Bumble bees are hovering over cherry blossoms and children's giggles ride the breeze right into my home. And that burst of activity is mirrored within, with projects and plans for the months ahead, another school year winding down (although a homeschooler's academic year never truly ends), and the seemingly endless list of materials to purchase for our gardens (did I ever tell you that Mr. Gluten Free Gigi is a horticulturist?).

With so much to do, a healthy snack can become an afterthought, but not with this refreshing spring smoothie! It's the perfect pick-me-up on a warm spring day with natural sweetness and lots of fresh fruit ~ Enjoy!

Spring Smoothie

1 cup honeydew, cubed
1/2 cup fresh pineapple, cubed
1/2 teaspoon minced fresh rosemary
1 Tablespoon honey
2 Tablespoons coconut milk creamer
1 cup ice cubes

Put all ingredients in the blender or food processor and blend until smooth. Serve immediately.

Makes one 12-ounce smoothie.
