Simplicity always appeals to me, but never more so than when the weather warms and it's time to spend more time outdoors than inside!

This side dish is one that everyone will love, and you'll be in and out of the kitchen in no time. 


It's so simple, anyone can toss these few fresh ingredients together for the perfect side dish anytime!

Greek Roasted Fingerling Potatoes

1 bag organic fingerling potatoes (I used Russian Banana)
Juice from 1/2 lemon
1 teaspoon oregano
1/2 teaspoon coarse sea salt (I used my Rosemary Salt - see how I make it HERE)
3 Tablespoons extra virgin olive oil

Preheat oven to 400 degrees.

Combine all ingredients in a glass baking dish large enough to allow potatoes to be in a single layer.

Toss the ingredients until potatoes are evenly coated. Bake for 30 - 45 minutes until potatoes are tender and skins are crisp and browning.
