I don't typically serve an appetizer, I know. But it's Friday - our last evening meal together, and I wanted to make it special.

The truth is, I'm going to miss these little dinners we've shared throughout April. I've enjoyed sharing my family's meals with you, as well as chatting about all of the products I've been fortunate enough to showcase throughout the month, courtesy of my phenomenal Contributors.

Your feedback and comments have been appreciated more than you know! Some of you have been with us each night for dinner, and that is an amazing gift to me! Thank you!

Today, I made my weekly visit to Whole Foods Market~Alpharetta Harry's and loaded up on organic strawberries (1-day sale is coming to a close ~ $1.99/lb today only!). And lots of other fresh produce! I got these potatoes, too. I put them in the oven to bake and when they were cool enough to handle, I scooped out the insides, leaving the outer shell in tact.

I mashed the potatoes, added a touch of plain coconut milk creamer, salt, pepper, and chives. Then I scooped the mixture back into the shells, and topped with vegan "cheese" shreds. A few minutes under the broiler to melt the "cheese", and this yummy side was done!

I took advantage of the fabulous fresh veggies on the salad bar at Harry's to form the "flower", and rolled Applegate Farms oven roasted turkey breast around strips of crunchy sweet red pepper with a touch of 365 Everyday Value Dijon mustard inside. This is one of my favorite dinners. Don't you love to eat the rainbow?

And here's my favorite "Thank You" dessert - just for you! As simple as the meal, but oh, so indulgent! I've paired this easy drinking French red with some of the organic strawberries I picked up at Harry's and am serving it up with a Miles-tini by Gigi! Perfect, isn't it?

Oh, you want the recipe for the Miles-tini by Gigi? Ok, here goes:

The Miles-tini by Gigi
Cut frozen Miles of Chocolate into 1-inch cubes
Place cubes in chilled martini glass (make it a fancy one like in the picture ~ it's that good!)
Serve cheerfully to your guests, then sit back and indulge along with them!

Now I know you're wondering about that title - Change Brings Something New. Well, with our month of dinners coming to an end, I didn't want to merely revert back to the same old recipe and information posting as before. I've had too much fun with you this month, and I don't want that to end!

I've been thinking over the past couple of weeks about what we could do, you and I, for May. It's National Celiac Awareness month, the ideal time to celebrate gluten-freedom! So, I want YOU to celebrate with me! Let's make it a-MAY-zing!

During the month of May, I'll be focusing on gluten-dairy-soy-nut-free International Meals, and I plan to serve up 2 new meals to you each week! The first week of May will feature Germany and Mexico, and I've already got our menus planned. The recipes, which I'll be sharing with you, are from natives of each country, so we'll get to have the real deal meal! Not to mention, all month long, we can focus on the fact that EVERYONE, regardless of what you eat, where you live, or what your background is, can eat well and be (gluten) free!
