I'm going to stop telling you "tonight we're going to have a simple meal". We always have a simple meal, don't we?
This one is no different. I know you're busy just like me, so maybe you appreciate how low-key I keep it around the kitchen. Today I've been caught up in preparing for a local event that I'll be attending tomorrow - this is my first "event" appearance, so wish me well.
I'll be at a local food festival to talk about the gluten-free allergy-aware lifestyle and share some treats with folks. At dinner on Monday, I'll share some pics with you and let you know how it went.
Some of the info I'll be highlighting at the event:

Speaking of highlighting important issues...I need to mention the effort going on in regard to the importance of gluten-free food labeling - have you checked out 1 in 133? My favorite market, Whole Foods~Harry's Alpharetta provided the ingredients for tonight's meal, with the exception of the chia which came from Life Max and the gluten-free multipurpose flour for the naan bread, which was supplied by King Arthur Flour. And today, our first peek at some recently introduced Enjoy Life Foods Crunchy Cookies (thank you for dessert, ELF)!
Friday's Menu
Hummus - 2 ways ~cauliflower-roasted red pepper hummus & ~traditional hummus with cilantro & (you guessed it) more roasted red pepper
The "fixins" - grape tomatoes, carrot shreds, olives, peppers, haricots verts, roasted garlic, & tiny bison meatballs (yes, lamb would be better, but I had bison, so bison it is!)
Naan Bread - I used the recipe from Fire and Salt - if you haven't seen this blog, you should check it out! (I added Mila chia seeds to my bread in place of the egg, courtesy of my friends over at Life Max.)

This is such a great meal for a busy day - you know how simple it is to whip up a couple batches of hummus, toss on some veggies, and add some animal protein (or not), and there you go. With a dinner so easy to put together, you can make a batch of naan bread. Here's mine...
We were pretty excited about receiving them, and today Little Chef said, "they're here, they're here! The Enjoy Life are here!". The Fed Ex guy knows that when we get packages, they usually contain food or food-related goods, so he totally understands why Little Chef is at the door with her Christmas morning face on.
