Yeah, baby! It's gluten-free! Pure Knead Hoagie Roll
There are some days when you just feel charmed. That means different things to different people, I realize, but to me, today was one of those charmed days. A truly Good Friday. A terrific Earth Day, spent in places where people sincerely care about protecting our planet.
If you follow my Tweets (Thank You!), you know where I was, but for those of you who do not follow, I visited foodie friends, old and new today.

Whole Foods Market~Alpharetta Harry's
You already know my "old" friends at Whole Foods Market~Alpharetta Harry's from all the wonderful meats, produce, and other goodies we've been enjoying for the past three weeks. I had such fun chatting with my pals in the wine department (have you seen those sales??), meats, and everywhere else in the store. And guess what I got? Some of the very first vidalia onions of the season - sweet and mild, they show up in tonight's meal. If that isn't awesome enough, I also got some great inside info - next Friday, April 29, fresh strawberries will be on sale for $1.99/pound! It's their fabulous 1-day sale, so you know where I'll be! If you're local and you get in on this sweet deal, tweet about it and let me know!
Speaking of local...I want to introduce you to my new friends...
...at Return to Eden. If you're in the metro-Atlanta area and have not visited them yet, you must drop by for a visit! This is the gluten-free natural foods, raw foods mecca in Atlanta! You will be astounded by the number of different gluten-free products available in this quaint and comfy store, and if you're not sure about navigating all those aisles of healthy goodness, just let them know and someone will be ready to help!
That's me getting my morning off to a great start!
I bet you're wondering how they know about all these gluten-free items that aren't found anywhere else. That's because Return to Eden employs an individual who has lived with Celiac Disease for 14 years! If you don't know Jennifer, get to know her! She's a super-sweet lady with lots of solid knowledge of the products on the market, and she'll help you with her honest opinion about R2E's offerings. She also serves as product ambassador for several companies that produce gluten-free foods, as well as being an active part of the Atlanta Metro Celiacs Support Group, serving as Program Coordinator.
I enjoyed spending time chatting with Troy about some exciting things happening in the store in the coming months, and I know I can't wait to be a part of it all! And you'll want to be there, too!
Next week is our final week of Now Gigi Serves Dinner!, and I have some special treats to share with you. In the spirit of the April in the Raw event hosted by my friend, Brittany, of Real Sustenance, I've got raw treats that can't be beat, so you'll want to check back each day to see what fun, new raw treats that I found at Return to Eden!
But what about dinner tonight? What about that bread up top? That bread is available at Return to Eden and it's baked right in Atlanta in a dedicated allergen- and gluten-free facility by Pure Knead. If you're anywhere in the area, you have to try their baked goods! And speaking of that...here's tonight's (hurried dinner) menu:
Please check out my Contributors page to see who provides all our dinners for this fun April event!
Loaded Hoagies on Pure Knead Hoagie Rolls with an organic Dijon mustard Italian herb vinaigrette and lots of organic veggies courtesy of Whole Foods Market~Alpharetta Harry's (mine features Applegate Honey Maple Turkey Breast, also courtesy of Harry's!)
365 Everyday Value Ripple Potato Chips with Sea Salt (straight from the bag, baby!)
365 Everyday Value Organic Baby Dill Pickles (right outta' the jar!)
Sliced organic Pears sauteed in Moscato with cinnamon & mace, served with a Cornmeal Cookie Strip flavored with raw Blue Agave & Chipotle and a hint of sea salt on top
Pure Knead gluten- and allergen-free hoagie roll.
Seriously, you've never had bread like this - gluten-free or not. Hand-crafted, small batch breads that come to life with a few minutes in your 350 degree oven. No wonder area restaurants serve them!

All the shopping made me hungry! I stacked my hoagie high with all-natural turkey breast, heirloom tomato slices, thinly sliced vidalia onion, sliced black olives, organic red leaf lettuce, and a Dijon mustard vinaigrette!
Quick & easy never tasted so good! And if the sandwich isn't enough, try some 365 Everyday Value all natural organic rippled chips with sea salt.

And in case you're wondering, Pure Knead breads hold up to all those toppings! No crumbles here!
I was stuffed, but I know you and your sweet tooth, so I made a little dessert. Simple. Easy. Pears sauteed in Moscato with mace, cinnamon, sea salt.

I sauteed pear slices until tender, yet firm, and liquid was reduced to one-fourth volume.
But you can't have just pears. There must be a cookie...a biscuit. So, I made a small batch of cornmeal biscuits sweetened with raw Blue Agave (I told you Return to Eden carries great raw products!) and a touch of chipotle (yes, chipotle...it works, trust me). I piped the batter onto a parchment-lined pan, sprinkled them with a touch of coarse sea salt, and baked them in under 10 minutes.
I spooned the pears into a glass, drizzled a bit of French Vanilla flavor coconut milk creamer on top, and added a couple of the biscuits. Voila! Dessert!
And here we are at the end of another week! I hope you have a wonderful holiday weekend, whether you celebrate Easter or Passover, or neither. I look forward to seeing you back for dinner on Monday for some fun raw items and more about my new friends at Return to Eden and their offerings. You'll also sample another great bread from Pure Knead, and at the end of the week, I've got a fun announcement for you!
