Welcome! I'm so glad you stopped by for this first day of Now Gigi Serves Dinner! The truth is, if I could have each and every one of you over "in real life", I would. I'd love to sit down and chat over a glass of wine and talk about what you love to eat and all your dietary restrictions, and then I'd make you a meal - a safe and healthy and delicious gluten-free allergy-friendly meal. I suppose this is the next best thing.
It was such a simple idea when it began, but in the past week, this fun event has really grown wings. I've been fortunate to have several terrific companies generously contribute delicious gluten-free products, and I'm even more excited now that I get to share these with all of you!

Two of these contributors, Whole Foods Market~Alpharetta Harry's and Enjoy Life Foods, are old friends of mine.

People who know me know that I'm a true Whole Foods girl, and Harry's is my preferred store - a combination of my own sentimental attachment and the quality product and customer service that you'll find there. I first shopped with them in the late 1980s and have been hooked ever since.

Enjoy Life Foods has been in my life since going gluten-free several years ago. My pre-workout snack staple is typically one of their products (today was a Choco Loco bar), and I can't begin to tell you how nice these folks are. I conducted a product review for them last December, which you can read about
HERE. Since that review, Enjoy Life has introduced some tasty new offerings, and I'm anxious to share these with you! You'll see these featured in some of my April desserts.

Two other companies that are joining me for dinner this month are King Arthur Flour and Life Max. These are new friends, and I'm so glad I met them!

King Arthur Flour introduced a line of gluten-free flours and mixes about a year ago, and I had never tried them. I honestly don't use mixes unless it's for a product review, but the flours, I was totally jazzed about! I've got several of their products to share with you and even a recipe or two (like tonight's dessert)!

Life Max is a company that I was introduced to through a colleague of Mr. Gluten Free Gigi. This is a terrific company concerned with healing the body naturally. The product that I'll feature here is Mila, their blend of chia seeds. Visit their site (via link above) to find why Mila is the preferred chia product for your health.

So, you can see why I'm so excited - two old friends, two new friends, and all of you - right here with me for dinner all month long! Now, let's talk about the eats...

With spring underway and temps (here in the South, anyway) on the rise, I have been turning from steamy ovenbaked dishes to lighter fare. 

After a busy weekend of home improvements, prepping the garden (cannot begin to tell you how excited I am about this!), and lots of writing, I thought a simple Monday meal was in order.

When I think of low-key warm-weather meals packed with nutrition, I think wraps. My entire family loves them, they're so easy to put together, and can be customized to everyone's taste.

Tonight's dinner is a great example of this - I made two versions of this wrap, as we have three meat lovers and one vegetarian in our house. You can take this idea and come up with your favorite combination, changing ingredients with the season, and even using a gluten-free bread wrap instead of lettuce if you prefer. The options are endless!

Sugar Snap Peas with Garlic, Lime, & Olive Oil ~ simply delish!
Here's tonight's menu:

All fresh and frozen produce & meats courtesy of Whole Foods Market~Alpharetta Harry's.

Chickpea-Rice-Lettuce Wraps with Roasted Red Pepper, Cilantro, & Mango (add in cooked, diced chicken breast if you like)

Steamed Sugar Snap Peas with minced garlic, lime, & olive oil (I use Whole Foods Market 365 Everyday Value Extra Virgin Olive Oil)

Brownies (I used the recipe for
Gluten Free Brownies from the King Arthur Flour website) ~ I substituted an equal amount of Earth Balance soy-free buttery spread in place of the butter for dairy-free.

This was a terrific meal that we all enjoyed and what a great move to do the quick & easy tonight - late afternoon I remembered the 6:30pm haircuts I had scheduled!

Thanks so much for dropping by! The wraps were great, and with a light meal like that, the brownies were an awesome indulgence!

The King Arthur recipe is terrific, although, I will say that I usually do not make our brownies with all the sugar & fat - but a nice splurge :)

I hope you'll visit me for dinner again tomorrow night!!

The brownies were out of bounds good - too good, in fact! Wouldn't want to keep those around the house, or else I get myself into trouble!!
