Now that I'm thinking about it, I "borrow" a lot of Maggie's recipes. Remember my favorite vegan bread recipe? That was from her, too. And just so you know, the only reason I would ever dream of changing any of Maggie's recipes if because of the nut allergy. She is lucky enough to be able to use healthful nut flours in her baking, but those are off limits to me.
What's not off limits to me is tonight's featured raw food! I've got a great one for you, and although it's another kale chip, it's different from the one we had on Monday. This is another great find courtesy of Return to Eden, the gluten-free raw foods mecca right here in Atlana! Because this raw chip fit so well with my main dish, I didn't make a side dish at all (and you don't realize how much room you'll need for tonight's dessert!).
And since I'm in the confessional, I might as well go ahead and spill it all.I didn't make tonight's dessert. I know, I'm a slacker. It's not even that I didn't want to make a sweet treat for you, it's just that yesterday I met a man and he brought me chocolate. Lots of chocolate. And it changed my life...forever. Now I fantasize about moving to Austin, TX and settling in somewhere near a man named Miles, and eating gluten-free chocolate and doing not much else. It could happen.
You're going to be hearing a lot more about the chocolate, so keep reading this post. (I promise it's worth it!)

Let's dig in!
Lots of veggies go into these patties; just dice them up & cook until tender.
Stir the cilantro in at the end and chill the mixture to make it easier to work with.
Form the mixture into patties and dredge in bread crumbs, and you're all set to bake!
The patties are easy to form - just make the size/shape you like, and place them on the baking pan & spritz with oil. Simple!
