S'mores Pudding ~ with Enjoy Life Foods Vanilla Honey 'Grahams' Crispy Cookies
I thought I would show you the dessert first so you'll stay. But if you get up during the meal and go to McSomewhere Else, I promise I'll understand.

You know how some days things keep coming up and nudging their way in between you and all that you need to accomplish? That was today for me.

I got up at 5a.m., as usual, and had morning coffee with Mr. GFGigi, as usual. I worked on articles (I have 3 due in the next week), and I even managed a workout & shower. Not bad, huh?

But then the phone started to ring. Can you write about this instead of that? Could you take a look at that email right now and tell me what you think? Would it be possible for you to send that information over right now? You get the idea.

And there were a couple of errands. And I needed breakfast. I decided to make myself an omelet, so whipped a couple of eggs, diced some heirloom tomato, had some "cheese" shreds goin' on, then I answered the phone. Again. Anyone for crispy-fried egg?

But you know me, I bounce back quickly, so I decided to put the morning's cremation behind me and move on to better things.

Surprise Brunch Muffins
I was rebaking these muffins to submit to this month's "Go Ahead, Honey, It's Gluten Free" brunch roundup, hosted by my friend, Maggie, from She Let Them Eat Cake.

They were really good! Which translates into "I ate 3". No kidding. Three. Whole. Muffins. Then I wasn't hungry, which may sound like no big deal, but it's time I let you in on a little something. It is quite rare, but there are times when I will fancy some baking experiment that I'm working on, and eat three of something, like these muffins. I'm not going to elaborate as I'm posting these tomorrow and you'll understand what I mean then, but trust me when I tell you that these are f-i-l-l-i-n-g. And how does this impact your dinner? If I'm  not hungry, then you shouldn't be hungry, either, because when I'm not hungry, I don't usually want to cook.

But I still cook because there are the others to consider, and now there's you to think about.

So tonight, you may not be so thrilled (unless you ate 3 muffins, too, in which case, you could care less what I made). But here it is...your Wednesday night Now Gigi Serves Dinner! (even when she's not hungry because she ate 3 muffins) menu:

Creamy Mac 'n Cheese (brown rice pasta, vegan "cheddar")

Tarragon Deviled Eggs (no mayo in these, I use 365 Everyday Value organic honey mustard from Whole Foods Market~Alpharetta Harry's & tarragon, sea salt, paprika)

Veggies (purple cabbage steamed in moscato with caraway seeds, pan seared red pepper & onion wedges)

S'mores Pudding (with Enjoy Life Foods cookies & 365 Everyday Value Chocolate Chips)

Beaten egg, rice milk, & vegan 'cheddar' ~ the standard ingredients (modified) for a southern girl's mac 'n cheese

I layer the cooked pasta with the 'cheese', top with more 'cheese', then pour the milk & egg mixture over the top & bake.

For added protein...eggs...boiling away (I didn't burn these).

No mayo in my deviled eggs ~ 365 organic honey mustard, tarragon, sea salt, & pepper do the job!

I love onion wedges seared in a little olive oil over high heat, but I skewer the wedges with toothpicks to keep them in tact.

I made vanilla pudding with rice milk & tapioca, then added some jumbo marshmallows for that s'mores-y vibe.

I layered ELF Vanilla Honey Grahams with the marshmallow pudding & 365 Everyday Value Chocolate Chips.

Gigi, I am SO glad I'm not the only one getting distracted and having issues in the kitchen. 3 in a week's time is too much for me. But everything looks amazing! Funny, I had some Tinkyada shells fall on me while I was trying to get something out tonight and I thought, "I really need to make mac & cheese."

ha! Not just you - it's me, too! I was so involved in the phone convo that my poor egg bit the dust! Then, pigging out on the muffins...geez, what's the matter with me?? But the mac 'n cheese - it was good stuff! :)

Now it's your turn to make it! :P
