Raw Nut-Free Fudge
While I'm not a Raw Foodist, I continue to read and research about eating raw to get an idea of what that really means so that I am able to understand and communicate with friends who follow a raw diet. In general, I'm interested in learning more about all types of diets and how people came upon their chosen way of eating and the raw foods diet is no different.

This recipe was developed for a web event. I was eager to participate because I knew it would be an opportunity to learn more about raw foods through my own research and experimentation and from others participating in the raw foods recipe event. 


What I didn't expect to learn was how much I enjoy raw foods and how many raw food dishes I eat. Developing this recipe gave me insight into the Raw Foods Diet, a new appreciation for its health benefits, and introduced me to an entirely new way of thinking about food. I hope you'll be as inspired by my raw foods recipes!

Update: This recipe was one prepared for a Raw Foods Demonstration at the Gluten Intolerance Group Atlanta Gluten Free Vendor Fair in October, 2011.

Ingredients for Raw Nut-Free Fudge
Raw Nut-Free Fudge
1/2 cup raw cacao powder
1 organic avocado, peel & pit removed
1/2 cup organic Medjool dates, pits removed
2 teaspoons organic raw vanilla extract
1/8 teaspoon fine sea salt

Place the avocado, dates, vanilla, and salt in the bowl of your food processor and blend until completely smooth - this takes quite a few minutes to achieve a perfectly smooth consistency, but hang in there - it's worth it!

Once you've achieved a smooth, creamy mixture, add the cacao powder and process until you have a uniform mixture (this doesn't take quite as long as the initial blending).

Spoon the mixture into a pastry bag fitted with a large star tip (I used my cupcake frosting tip) and pipe in swirls onto a wax paper lined cookie sheet. (My swirls are approximately 1 1/2 Tablespoons of the mixture).

Chill fudge for 45 minutes, or until a firm, fudge-like consistency.

This fudge keeps well for up to 5 days in the fridge (if you have leftovers). It also makes an excellent frosting for cake or cupcakes if used prior to chilling!

I haven't made chocolate pudding w/ avocado, but I bet this is similar in flavor profile. I use it for my brownies, though, and it's our fav!

Delicious! It's definitely more difficult to do raw without nuts...I went on a raw kick a year ago, but then I realized I was sensitive to nuts (and avocados :( among other things) so I gave up. But once I'm able to have avocado and dates again, I'll be coming back for this recipe!

This looks so good. Unfortunately, my stupid food processor (I know it's inanimate, but I still think it's stupid.) died on me. And, my blender is kind of sucky. BUT, I am going to get a new processor, so I will make this as soon as I do. I would LOVE a healthy version of fudge. Some of these raw recipes I am really going to trade for traditional stuff. They are healthier and taste just as good. Beautiful job, my dear. Just beautiful!

The nut allergy is definitely an obstacle! I couldn't find a large number of raw recipes that didn't incorporate nuts - oh, how I wish I could eat them!! But,avocado yield a really creaminess to the fudge, so it worked. Unfortunately, off limits to you (for now), but maybe you'll be able to have them again soon. I had to give up apples & artichokes for 2 years, and now, I can eat both.

So happy to see you here!! I do think an inanimate object can be stupid. And I am certain that a blender can be sucky - we must own the same model. When you get your new (not stupid) processor, make the fudge - I bet you'll love it!! :)

And I totally agree with you - I'm trading some of the recipes I've seen so far for the 'traditional' versions. I am amazed at the dishes I've seen so far!! My family absolutely prefers this fudge to the 'real deal' - really shocked me - even after they knew what was in it (but I must say, we eat avocado brownies, so they're kind of used to it). ;)

I'm glad you're excited to try this decadent raw fudge - we love it!! I am not so sure that I know more about the raw foods diet than anyone, to be honest. I've learned from so many talented bloggers who posted before me, and from talking to several folks on the raw foods diet.

And cocoa powder as we know it (i.e., available in most stores), isn't on the raw foods list from what I understand. What I've used here to make this a "raw" recipe is cacao powder, which is derived from cold milling a powdery cake of cacao that resulted from cold pressing cacao beans. (much more complex than this, but again, I do not claim to have extensive knowledge in this area). :)

Now, you could certainly achieve equally good results with the typical cocoa powder for baking that you and I are most used to. It should not change the outcome, but will not be technically "raw" (I don't think).

I love recipes like this! Mejool dates and avocados are such wonderful "staples" for raw food. The way you "presented" your raw fudge is gorgeous! Adding a touch of mint would be a good version for frosting. =) I make raw truffles out of these ingredients and use some almond butter in the mix (I know yours is supposed to be nut-free).

And I can easily see where almond butter would make a lovely (and healthful) addition (if not for that pesky nut allergy of mine!).

Gigi! I tried this, and I totally loved it. I used cocoa powder, but reduced it to 1/3 cup, and added a pinch of cinnamon because I adore cinnamon. I did have to add in about 1.5 tsp of water, because I have a lousy food processor.But that aside, everything was perfect!

I have to agree with your hubby. I'd never put sugar in my fudge again.

Oh Gigi, I wanted to let you know I made this for a class project! It had to be really energy dense (high calorie) and high protein, so I added 1/4 cup of sunflower seeds, but otherwise followed your directions. It was delicious! Thanks!

Love the look of the fudge and am going to try it this week. Are you able to freeze this recipe so that it stays fairly hard if I put it in the kid's lunches?

This fudge is phenomenal!!! Yes, you can freeze it. I have made LOTS at once and have frozen it for quick snacks for the kids (ok, and for me, too!). :)

It does hold up, but I'd recommend an ice block (I'm sure you've already got this covered) in the lunch box.

Appreciate your kind words; however, just to be clear, I am not a raw foodist. I am gluten free, dairy free, soy free, and nut free, all for health reasons and have been for over 4 years.

As a special diets recipe developer, I create all types of recipes... even raw, vegan, vegetarian, egg free, etc. When it comes to wholesome, healthy ingredients, anything goes! :)

This recipe was a big hit when I used it in my raw foods demonstration at the Oct. 2011 Gluten Intolerance Group of Atlanta's Gluten Free Vendor Fair... I know you'll love it!
