You got it... Blueberries!
I was surprised, too. I knew they were popular, but second?! Then I thought about it and figured out why. As you'll see, it's thanks to a somewhat new "discovery".
Now that it's summer, fresh blueberries are showing-up in supermarkets everywhere!
I picked up my first store-bought blueberries of the season last week. I’ve been enjoying blueberry smoothies, fresh berries on gluten free cereal, and bowls of nothing but blueberries.
In another few weeks, the three gangly blueberry plants in my garden will be ready to harvest. More blueberries!
With such great flavor and uses in recipes of all kinds, the USDA estimates Americans consumed nearly 1 1/2 pounds of blueberries each in 2009...
That number has skyrocketed since the mid-2000s. This could be due to reports of the potential health benefits of this sweet, blue fruit. From improving memory (Krikorian et al, 2010) to fighting harmful cell growth (Seeram et al, 2006), researchers are praising blueberries as one of many nutritional “superfoods”.
I agree... blueberries are super! Red Hot Momma agrees, too... Just look what happened when she got the (good kind of) blues!
Recipe adapted from the Blendtec Lifestyles Recipe Book
1/2 cup rice milk
1 cup frozen blueberries
1 frozen banana, but into chunks
2 Tablespoons agave nectar
1/2 teaspoon vanilla extract
1/4 cup ice cubes
We'll place the ingredients in the blender jar in order listed and secure the lid. Then we'll press the “Ice Cream” button and let Red Hot Momma go to work!
If you are using a traditional blender or food processor, blend until all ice is crushed and mixture is smooth.
Now let's enjoy our gluten free blueberry "superfood" soft serve!
