It’s amazing to me the number of delish vegan dishes that I cook and enjoy regularly as a part of my own special diet! In fact, nearly 85% of the recipes on GlutenFreeGigi.com are vegan! To keep last week’s awesome “Vegan Vibe” going, I have three new, easy-to-follow How-To videos for you! As always, the recipes are gluten free, dairy free, soy free, and nut free, and once again they are all VEGAN!

Here’s a vegan side dish that’s low in calories and fat and packed with Vitamin C! It’s also free of the more common allergens, so it makes a great choice when serving someone on a special diet!

Makes approximately 4 cups
Serving size = 1 cup
Cost per serving: $0.87

Cornbread

Every Southern cook has a special cornbread recipe... I’m no different. After a bit of trial and error, I settled on this simple fool-proof recipe. No one will ever know it’s gluten free! Gluten Free Gigi Tip: This recipe works well with either 2 real eggs OR with egg replacer prepared to equal 2 eggs. Powdered egg replacer is available in most supermarkets. I use Ener-G brand when baking.
 
Makes approximately nine 2.5 x 2.5-inch squares.
Serving size = 1 square
Cost per serving: $0.22

Finally, here’s a fantastic, simple salad dressing that’s low in fat, high in flavor and low in cost...

Creamy Cilantro Salad Dressing

This vegan recipe comes together in seconds and is suitable for nearly everyone!   Gluten Free Gigi Tip: If you aren’t a fan of cilantro, you can substitute an equal amount of another herb such as basil or parsley.

Makes approximately 1 cup
Serving Size = 1 Tablespoon
Cost per serving: $0.12
