In these videos, I show you how to put together a group of affordable vegan dishes, 2 of which are free of the “Big 8” food allergens. That means you can invite nearly everyone to watch the game and enjoy a flavorful, nutritious meal without worry!

No fresh tomatoes on hand? No problem! Using canned organic tomatoes makes delicious homemade salsa possible any time of year! Pair this naturally low-fat and low-calorie pre-game snack with certified gluten free tortilla chips and serve up a winning combo everyone will love!
Makes approximately 4 1/2 cups
Serving size = 1/2 cup

Vegan Sweet Potato Fritters

Gluten Free Gigi Tip: For a super-simple tangy dipping sauce, combine 2 Tablespoons Balsamic Vinegar with 1/2 cup ketchup and warm it up to serve along with the fritters!
Food Allergy Note: This recipe contains 3/4 cup cornmeal. If you have a corn allergy, replace the cornmeal with the following: 1/4 cup + 2 Tablespoons tapioca flour combined with 1/4 cup + 2 Tablespoons white (or brown) rice flour. Then whisk to blend. You will still need the additional tapioca and rice flour called for in the recipe.
Makes 12 fritters
Serving size = 2 fritters
