Here's some helpful information. It's my previous “A Side of Science” where I outline the basics on gluten free living. I discuss what gluten is, why people go gluten free, and diagnosing Celiac disease. You will find it especially useful if you suspect you may have Celiac disease or Gluten Sensitivity, or if you're new to a gluten free special diet.
Adjusting to any special diet can be a challenge at first, but I have learned there is no limit to the tasty, nutritious foods you can enjoy... Even on a budget! I keep it simple for you too!
I’ve been living gluten free and creating fabulous, easy-to-make dishes for four years now. My special diet has helped me completely eliminate the chronic pain I suffered for over two decades... That is truly worth celebrating!
Of course, what's worth celebrating even more is the beginning of the discovery of the treatment for Celiac disease in the first place!
It's not surprising that grocer shelves are filling up with new gluten free products! Although the products are new (and so is a lot of the gluten free labeling!), Celiac disease has been around for over 100 years!
In 1888 Dr. Samuel Gee linked Celiac disease with diet. This British physician declared if the condition was to be “...cured at all, it must be by means of diet.”
Dr. Gee’s contribution to helping find a cure for Celiac disease was incredibly significant. That's why the Celiac and gluten free community celebrates National Celiac Awareness Day on September 13, Gee’s birthday!
We're going to celebrate too, with some...
For a rich and creamy dessert, indulge in my Vegan Chocolate Mousse, also free of the "Big 8". You simply won't believe how simple, affordable, and delish this mousse is!
If you're in the mood for cookies, try Vegan Dark Chocolate Snowcaps with their pretty crackle top or whip up a batch of dense, chewy Vegan Chocolate Chip Cookies... or both! Either way, you can't go wrong with these easy recipes that fit right into a gluten free special diet!
How about a platter piled high with moist bites of chocolate and coconut covered sponge cake cubes? My Lamingtons are as fun to make as they are to eat! And of course, I've made them Vegan and Gluten Free for you to enjoy!
If you have your own favorite cake recipe, why not try this healthy Vegan Superfood Chocolate Frosting to top it?! There's a "secret" ingredient that you will not believe! (And please don't tell my kiddos because they still do not know what it is!)
Whatever dish you choose, here's to our health and to Dr. Gee for his great insight!
My travels begin with the 34th Annual Celiac Sprue Association Conference in San Diego September 15-18. This important educational conference is held in conjunction with Columbia University and features top researchers and physicians like Dr. Martin Kagnoff, Dr. Greg Harmon, and Dr. Peter Green.
I’ll be learning more about the role of genetic testing in Celiac disease, how to avoid nutrient deficiencies on a gluten free special diet, Celiac disease and our children, and much, much more!
To keep you updated on the conference and all the exciting new information I learn, I will “live tweet” during the event! Follow me on Twitter and look for the hashtag #GFGigiFallTour2011!
I’ll also be keeping the Gluten Free Gigi Facebook page updated. “Like” me there and you won’t miss a thing!
The CSA Conference in San Diego is just my first stop. I'll be making more stops on my fall tour so stay tuned!
Now, on to...
The Answer: You know by now that Dr. Samuel Gee was the first to link the treatment of Celiac disease to diet. The year Dr. Gee declared this was 1888! We’ve come a long way since then, and together, we will continue to make strides in living better, fuller lives on our gluten free special diet!
I hope this “A Side of Science” gets you in the celebratory mood when it comes to your special diet! Try some of the treats above, follow along during my upcoming travels, and don’t forget to stay connected!

Remember, my mission here at GlutenFreeGigi.com is to reveal what I learned through 20 years of mis-diagnosis before I finally discovered my own food allergies. I also share what I continue to research and learn when living with my food allergies each day. These are my own insights. People tell me they find the information helps them navigate their lives more comfortably and confidently with their special diets. I hope the same will be true for you!
