Pancakes (Vegetarian with Vegan option)

These pancakes are so simple and tasty they deserve center stage, so this week I have a single easy-to-follow How-To video and recipe for you.

Pancakes are a breakfast staple, and everyone needs a go-to pancake recipe that tastes great and easy to make, especially if there are kids in the house. As a mom of two, I know how difficult it can be to get kids to eat a healthy breakfast. Add a food allergy to the mix, and that task becomes even more challenging!  

I developed this recipe especially with children on a gluten free casein free (GFCF) diet in mind. Of course, these pancakes are also soy free, nut free, and there’s even an egg free option for vegans!

Light and fluffy, but with hearty texture, these aren’t just “good for gluten free pancakes”. These are truly GREAT pancakes... Gluten free or not!

Serve them to anyone and everyone... I promise, they’ll flip for these!

If by some chance you end up with leftovers, they freeze remarkably well. Simply cool to room temperature. Then layer with squares of wax paper between them, and wrap in plastic wrap or foil. Freeze for up to one month. Whenever you want a great pancake, gently reheat in the microwave or oven.

I love them with pure maple syrup, agave nectar, or avocado honey and even avocado slices!

For an extra-special breakfast or brunch, consider making a batch of my homemade applesauce and serving it alongside (or right on top of!) these pancakes. If you want to see exactly how to do it, next week, I'll have a special How-To video of my applesauce recipe for you!
