Dairy Free Sweetened Condensed  "Milk"

3 cups So Delicious coconut milk creamer 
1 cup sugar
Pinch salt
1/2 teaspoon vanilla extract, optional


Combine all ingredients and cook over medium heat until reduced by just more than half. This takes about 30 minutes. 


Stir occassionally, and keep an eye on the mixture as it cooks. It should be gently boiling, but not boiling rapidly or trying to boil over. If it is, you're heat is too high; adjust accordingly.

Makes about 1 1/2 cups.


Store in a glass jar with tight-fitting lid in refrigerator for up to 1 week.

This is brilliant. That common sweetened condensed milk is so gross. I've never tried the "So Delicious" brand, but will definitely give this a shot. Coconut milk is my "go-to" milk of choice. I use it in so many ways, but have never thought of this. Thanks!

I can't tolerate So Delicious milk or creamer but I can have plain coconut milk. Would canned coconut milk full or lite work in place of the creamer? I can't have dairy either, any suggestions?
