First, I want to share some holiday MAGIC with you!
Preparing for Christmas in our home always involves two favorites: cut-out cookies decorated on Christmas Eve just for Santa (freshness counts, right?) and the gingerbread house. For 18 years, the gingerbread house has been Christmas morning “breakfast”.
When the girls were very young, we split a large plastic rubbish bag down one side, spread it out in the middle of the kitchen floor, placed the decorated house right in the center and let them have at it, butter knives in hand. As they grew and became (a little) less messy, we moved this deconstruction effort to the dining table. Each year, each house (some insane years we made more than one) is devoured and left in a shambles. That Christmas morning scene never gets old.
Oddly, I don’t really recall the transition to gluten free versions of these sweet memories as difficult. We just did it and it tasted good.
Now, both my sweet girls live gluten free, and neither really remembers life with gluten. They know anything made with gluten can be made without it and that it can taste great!
That got me thinking...
There is one recipe from my childhood holidays I never refashioned to fit my gluten free, dairy free, soy free, nut free life.
In fact, until I started thinking of what to share for this event, I haven’t even considered the super-simple bars my mother made often during the holidays.
I know you’ve had them. I've seen them posted on Facebook and around the web already this holiday season.
“Magic Bars”, “Seven Layer Bars”, “Everything Bars”, “Homemade Candy Bars”. I bet you’ve even got other names for them I’ve never heard. Whatever you call them, if you’ve had them, and if you’re honest about it, you know they’re just plain yum. (You can find the original recipe over at Eagle Brand.)
There’s not one healthy thing about them. They are loaded with fat and sugar, and all sorts of things you should probably never feed anyone, especially children.
None of that mattered because I couldn't eat them, anyway. I don’t think my mother has made them in a decade or more. They just fell by the wayside, I suppose.
Until now.
I was in the kitchen working on a new recipe, and *voila!*... an idea for my Home for the Holidays post!
HOME for the Holidays. My childhood home during the holidays always had plenty of these bars. Pans and pans of them. I was elated to finally know what I would share with all of you!
Some were easy to substitute, others were a challenge. Namely, butterscotch chips and sweetened condensed milk. I made my own version of each, and I'm including those recipes here, too, in case you're like me and need gluten free dairy free options for these ingredients.

Gluten Free Magical Seven-Layer Bars
(I tweaked the name just a little, too. It sounds like something you'd feed your pet unicorn to keep it all sparkly, doesn't it?)
1 1/2 cups Gluten Free graham cracker crumbs
1/4 cup Earth Balance soy free buttery spread, melted
1 recipe dairy free sweetened condensed "Milk" (click for my recipe)
1 cup dairy free butterscotch chips (click for my recipe)
1 cup Enjoy Life Foods mini chocolate chips
1 cup unsweetened grated organic coconut
1 cup roasted (salted or unsalted, whichever you prefer) organic sunflower seeds (I used salted to offset the sweetness of the bars a bit!)
Gluten Free Gigi Tip!
If you're making the dairy free sweetened condensed milk and butterscotch chips, do that first. It takes a little time to prepare those.

Store them in a a glass jar with a tight-fitting lid.
They make a great homemade gift idea for those dairy free folks on your list!
Preheat your oven to 350F. Spray a 9x13-inch baking pan (I like to use a glass baking dish for these bars) with a cooking spray or grease lightly. Set aside.
In a mixing bowl, stir graham crumbs and Earth Balance together. Press into the prepared baking dish.
Pour sweetened condensed "milk" evenly over top of graham crust.
Remove from oven and cool for 20 minutes.
Use a knife to go around the edge of the pan to loosen the bars, then cut into squares. Allow bars to cool completely before removing from pan.
I love to chill these bars just a little before serving!
