First, I want to share some holiday MAGIC with you!


Moves for school and work made “home” many places over the years for my family. For me, the recipes I make every year with my two girls are “home” for the holidays, regardless of where we are. 

Preparing for Christmas in our home always involves two favorites: cut-out cookies decorated on Christmas Eve just for Santa (freshness counts, right?) and the gingerbread house. For 18 years, the gingerbread house has been Christmas morning “breakfast”.

When the girls were very young, we split a large plastic rubbish bag down one side, spread it out in the middle of the kitchen floor, placed the decorated house right in the center and let them have at it, butter knives in hand. As they grew and became (a little) less messy, we moved this deconstruction effort to the dining table. Each year, each house (some insane years we made more than one) is devoured and left in a shambles. That Christmas morning scene never gets old.

Oddly, I don’t really recall the transition to gluten free versions of these sweet memories as difficult. We just did it and it tasted good. 


Now, both my sweet girls live gluten free, and neither really remembers life with gluten. They know anything made with gluten can be made without it and that it can taste great!

That got me thinking...





There is one recipe from my childhood holidays I never refashioned to fit my gluten free, dairy free, soy free, nut free life. 

In fact, until I started thinking of what to share for this event, I haven’t even considered the super-simple bars my mother made often during the holidays.

I know you’ve had them. I've seen them posted on Facebook and around the web already this holiday season.


“Magic Bars”, “Seven Layer Bars”, “Everything Bars”, “Homemade Candy Bars”. I bet you’ve even got other names for them I’ve never heard. Whatever you call them, if you’ve had them, and if you’re honest about it, you know they’re just plain yum. (You can find the original recipe over at Eagle Brand.)

There’s not one healthy thing about them. They are loaded with fat and sugar, and all sorts of things you should probably never feed anyone, especially children. 

None of that mattered because I couldn't eat them, anyway. I don’t think my mother has made them in a decade or more. They just fell by the wayside, I suppose.

Until now.

I was in the kitchen working on a new recipe, and *voila!*... an idea for my Home for the Holidays post! 


HOME for the Holidays. My childhood home during the holidays always had plenty of these bars. Pans and pans of them. I was elated to finally know what I would share with all of you!


It was the perfect idea, except for a minor detail...Every ingredient in the original recipe is off-limits to me. 

Some were easy to substitute, others were a challenge. Namely, butterscotch chips and sweetened condensed milk. I made my own version of each, and I'm including those recipes here, too, in case you're like me and need gluten free dairy free options for these ingredients.

Gluten Free Magical Seven-Layer Bars

(I tweaked the name just a little, too. It sounds like something you'd feed your pet unicorn to keep it all sparkly, doesn't it?)

1 1/2 cups Gluten Free graham cracker crumbs
1/4 cup Earth Balance soy free buttery spread, melted
1 recipe dairy free sweetened condensed "Milk" (click for my recipe)
1 cup dairy free butterscotch chips (click for my recipe)
1 cup Enjoy Life Foods mini chocolate chips
1 cup unsweetened grated organic coconut
1 cup roasted (salted or unsalted, whichever you prefer) organic sunflower seeds (I used salted to offset the sweetness of the bars a bit!)

Simple ingredients are layered for a gooey, super-sweet holiday treat... gluten free & vegan!


Gluten Free Gigi Tip!

If you're making the dairy free sweetened condensed milk and butterscotch chips, do that first. It takes a little time to prepare those.

Dairy Free Butterscotch Chips are easy and delicious! 

Store them in a a glass jar with a tight-fitting lid. 

They make a great homemade gift idea for those dairy free folks on your list!




Preheat your oven to 350F. Spray a 9x13-inch baking pan (I like to use a glass baking dish for these bars) with a cooking spray or grease lightly. Set aside.

In a mixing bowl, stir graham crumbs and Earth Balance together. Press into the prepared baking dish. 

Pour sweetened condensed "milk" evenly over top of graham crust. 


Layer butterscotch chips, chocolate chips, coconut, and seeds. Press gently with palm of your hand.


Bake for 25 minutes. 

Remove from oven and cool for 20 minutes. 


Use a knife to go around the edge of the pan to loosen the bars, then cut into squares. Allow bars to cool completely before removing from pan.

I love to chill these bars just a little before serving!

I've found that a lot of people substitute tree nuts and tree nut products when going gf. With a nut allergy, it's always difficult to find a recipe that will work, so thanks! The breakfast/dessert book looks good (esp if there are nut free recipes inside)!

I would really love the 7 Quick Start Tips for Living a Healthy Gluten-Free Life e-book. Although the other books also look terrific and would love those also! I don't have any G-F books in my arsenal yet and they would truly help me and my family with recipes.
My favorite food for holidays... anything with pumpkin spice. I love spicy foods, especially warm spiced foods. Hot Cinnamon Spice tea is an absolute favorite, I also love pumpkin pie...or I can go with just pumpkin pudding, apple... well now its an apple casserole with no crust, which makes it much easier to make anyway, and super tasty too. Yup, I am a spicy girl, just give me spicy in this season and I am happy!

Oh, the Spunky Coconut. That said I have NEVER had a 7 layer bar. I've seen them for years and years and have no idea what kept me back. I wonder how they'd be with coconut shreds? I've been eying up the Spunky Coconut's book for a while now. That would be my choice! My fav and ultimate holiday tradition is pie time at my mom's house. My job was always the pie prep while she prepared the rest of Christmas dinner. Fun times!

PB chips will work! I've done it with my homemade sunflower seed butter! :)

Just make sure you use some brown sugar so that you'll get the crystallization you need to make them hold together. You can omit most of the fat when you use the PB because it's got plenty of fat in it to make the recipe work! :)

You're in the right place for gluten free AND nut free. I know exactly what you mean, and substituting a nut flour for traditional gluten-full flour is NOT the answer for those of us with nut allergy.

And yes! Coconut shreds are what most people use in the recipe. I just love the unsweetened grated coconut in my ingredients photo so much, I use it for every recipe that calls for coconut. :)

And I think the shreds are pre-sweetened, and trust me, these bars are SWEET!

And guess what?! My "pet" and I already have a gluten free lemon bar. It's also free from soy, nut, dairy, but does have eggs... that is the major ingredient in the filling, so left those in... here's the link if you're interested:

My favorite holiday recipe is my mother-in-law's raw cranberry-apple relish. This year, I was going to make it myself and take it to the Thanksgiving gathering on my side of the family...and then I had an unexpected surgery the week before Thanksgiving and wasn't feeling well. My mother-in-law was at my house the night before the gathering, and she and my father-in-law graciously made the cranberry-apple relish for me. I was so grateful to be able to take it to my mom's house the next day...and to eat the leftovers.

These look really yummy! Thinking about it, I realised that clementines are synonymous with Christmas for me. We used to always have them at our house at Christmas time and in the bottom of our stockings. I went out and bought some today!

The set of e books looks pretty good, especially the good morning breakfast. I am always looking for new recipes to feed my GF, DF family, espescially our toddler. My favorite Holiday food was the rosettes my Grandma would make for me every year. Even thought I can not eat them for me and I share them as i drool and dream and wonder about a GF, DF receipe. Thank you for this AWESOME 7 layer bar recipe!

Magic Bars are my absolute favorite Christmas treat! I am so glad to see someone do a version gluten free! Have to find some So Delicious coconut creamer to make the condensed milk and try these out!!!

Thanks! Yes, grain free is no problem on the bars. I LOVE homemade gluten free grahams, though, so used my recipe for those. :)

You're so welcome! I love sharing the how-to for recipes. If you haven't been following along, check out my You Tube channel (www.youtube.com/GlutenFreeGigi) and you'll see all sorts of how-tos for gluten free, dairy free, soy free, and nut free recipes like pasta, pie crust, cakes, cookies, and lots of savory dishes, too!

For the fudge your hubby loves, here are some ideas that may help a little:
1. check out my dairy free gluten free fudge recipe here: http://www.glutenfreegigi.com/1/post/2010/12/rich-creamy-dairy-free-fudge-also-gluten-soy-nut-free.html (this is a link to the post on the site here and there is an embedded You Tube video, too, so you can see exactly how to make it - no fail!). Be sure to read the other comments; it's a popular recipe, and easy to make. :)

2. For a peanut butter substitute, try sunflower seed butter (SunButter is a brand name for it). It tastes great and it's what I use. My family can't tell the difference, especially in recipes. And it's really good for you with a touch more protein than peanut butter has. :)

Mmmm what I'm missing from my Holiday favorites since going gluten free is toffee bar candy that starts with crackers has tons of butter and chocolate chips... it was really easy to make and deadly to any diets but soooo good. I haven't found a good gluten free cracker replacement ... I haven't looked at the recipe in a few years but the crackers were either club crackers or saltines and by the time the recipe was finished you had no idea that it started with crackers!!! LOL now I'm hungry!!! I'd love to have a copy of The Spunky Coconut Cookbook. I want to do more with coconut!

I'd like to win the Spunky Coconut Cookbook. I'm not sure I have an all-time favorite holiday food, though one of my favorites was the homemade pizzelle cookies we used to make at grandma's house growing up. My dad carried on with the recipe, but has not had success at making them gluten free so I can have them (and they live too far away now for me to help or experiment since I don't have an iron.) I recently found a store-made variety, but couldn't bring myself to buy it - there's no way they would be the same.

I'd love the coconut cookbook- my favorite holiday is definitely Christmas!! Our version of 7 layer cookies are called "hello Dolly Squares" and the recipe came from a recipe book my Mom received from the ulitity dept offered it's customers in the 60s...

I subbed the graham crackers for Rice/Cinnamon Chex and smashed them up. In hindsight, I wished I would have stuck them in a blender instead of hand smashing them up.

I would LOVE either the anti-candida book or Spunky Coconut cookbook. I've got a friend for whom I might actually be able to do this recipe if we switch out sugars and skip the chocolate chips! I'll try it out.

This sounds soooo yummy, but where can I get GlutenFree vegan graham cracker crumbs? I can't eat eggs or dairy or corn or rice (allergies) and have only found boxed GF graham cracker-ish cookies that I can't eat..If you have a recipe to share that would be awesome. I would LOVE The Spunky Coconut Cookbook 2nd Edition...
and my favorite holiday food would be grandmas apple slices!!!!!!!! YUM! We can even make them GF now :)
