Low Fat and Naturally Gluten Free, Streusel-Topped Sweet Potato Casserole
When Marion, a subscriber from Indiana, emailed asking for a lower fat version of sweet potato casserole to serve at her family's Christmas dinner, I knew I had to share this simple recipe! 

Not only is this holiday favorite low in fat, the sweet potatoes are high in beta-carotene, vitamins, and fiber. All that nutrition AND being naturally gluten free makes this dish a must for your Christmas meal! 

With only a few ingredients and super-simple prep, you can have my Streusel Topped Sweet Potato Casserole on the table in no time! Let's get in the kitchen... 
 
Streusel Topped Sweet Potato Casserole
6 cups sweet potatoes, peeled, cubed, and cooked*
1/4 cup coconut milk creamer (or any milk you like here)
1/4 cup pure maple syrup (honey or agave would work, too!)
1/2 teaspoon sea salt
1 egg, lightly beaten (Ener-G egg replacer works well here if you are egg-free.)


Preheat your oven to 375F. Lightly spray an 11x7-inch glass baking dish with cooking spray or oil.

*To cook potatoes:

Place the potatoes in a large pot and add just enough water to cover. Bring the water to a boil over high heat. Cover the pot and reduce heat to medium for about 15 minutes, or until potatoes are tender. 

Drain the sweet potatoes and allow them to cool slightly. Process them in your food processor (or blender) until smooth. Spoon the potatoes into a mixing bowl, then add milk, maple syrup, salt, and egg. Stir until blended.

Spoon potatoes into the prepared pan. Set aside while you prepare the topping.

Streusel Topping:
1/4 cup brown rice flour (white rice flour, sorghum flour, or another gluten free flour would work - I do not recommend using a starch like tapioca, potato, corn, etc.)
1/4 cup packed brown sugar (white sugar would also be fine here)
1 teaspoon ground cinnamon (use more or less, as you like, or omit; you may also substitute ground ginger if you prefer)
2 Tablespoons chilled butter (or dairy free butter substitute like Earth Balance buttery spread)


Combine flour, sugar, and cinnamon. Stir to blend. Cut in butter with a fork until mixture resembles crumbs. Sprinkle evenly over the top of the potato mixture. 

Cover with foil and bake 15 minutes. Remove foil and bake an additional 25 minutes. 


Remove from oven, cool 15 minutes before serving (if you can wait!). 

Store leftovers covered tightly in the refrigerator for up to 5 days. This dish can be frozen for up to one month. To reheat, first thaw at room temperature, then place in a 350F oven until heated through.

This recipe is a definite win! I made a gluten-free pumpkin pie and a gluten-free sweet potato pie for Thanksgiving. We loved both, but the sweet potato one was probably our fav :)
