full of nutrition and makes terrific use of a Staple Recipe! It tastes great, too! And when it comes to taste, I show you exactly how I incorporate the Six Taste Groups of Ayurveda into this dish...

Using Staple Recipes and AYURVEDA for reNEWal!

In last week’s “A Side of Science”, I told you about the Six Taste Groups of Ayurveda and shared Staple Recipe #3, How To Cook and Prepare Dry Beans

This week, I've listed for you how I've included all Six Taste Groups in a single dish for a healing winter meal for reNEWal.

The taste will win you over, but the nutrition profile of this satisfying vegan meal will keep this recipe in the front of your recipe box! 

With this dish, here's how I've pulled all Six Taste Groups together...

(1) Cannellini beans from the astringent taste group provide a healthy does of protein and fiber,
(2) Leafy green rainbow chard provides the bitter component along with some amazing anti-inflammatory properties,
(3) Onions and garlic represent the pungent taste group,
(4) Olive oil is sweet,
(5) Salt is salty, and...
(6) A healthy squeeze of fresh lemon juice at the end gives us our sour component and rounds out this one-dish meal!

The finished dish, as you'd expect with a meal that combines all Six Tastes Groups of Ayurveda, is amazing!

Sauteed Cannellini Beans with Rainbow Chard   
Gluten Free, Dairy Free, Soy Free, and Nut Free


3 cups cooked cannellini beans, homemade or canned, well-drained (see my How-To Video: Prep & Cook Dry Beans)
2-4 Tablespoons olive oil, divided
1 large red onion, caramelized (see my How-To Video: Caramelized Onions)
6 cloves garlic, sliced length-wise
3 large rainbow chard leaves, stems removed, sliced into 1-inch pieces
1/2 cup cooking liquid from beans (or dry white wine, or water, or Homemade Stock)
1/2 - 1 teaspoon coarse sea salt (if you salt the beans when you cook them OR if you use canned beans, use less salt)

1 teaspoon Herbes de Provence (Check my FAQ page for details)
1/4 teaspoon black pepper 
Wedge from large lemon (about 1/4 lemon)

First, caramelize the onions:
Heat 1/2 Tablespoon olive oil in a large skillet over medium heat. Add onion and stir to coat with oil. Cook for 5 minutes, stir, reduce heat, and allow to gently cook until onion begins to brown. Stir the onion and allow it to continue cooking over low heat. If it begins to stick, add a bit of water, 1 Tablespoon at a time, to keep onion from drying out. When onion is caramelized, transfer it to a bowl and cover.

Next, sauté the beans:
Heat 1/2 to 1 Tablespoon oil in the skillet you cooked the onions in over high heat. 


Gluten Free Gigi Tip!
Saute is cooking in a little fat (usually olive oil or clarified butter) over high heat in a shallow pan. Ingredients to be sautéed are usually in small pieces for quick cooking, which makes beans an ideal candidate for a sauté. Be sure the beans are in a single layer. This allows steam to escape the pan as the beans cook and keeps them from becoming mushy.

Use a spatula to gently flip the beans after 2-3 minutes. Cook on the opposite side for 2-3 minutes more.

 
Note:
You will likely need to saute the beans in 2 batches. If you do, saute half the beans, transfer them to a bowl and set them aside while you saute the remaining half.  

Return all beans to the pan, add onions and garlic; stir gently. 

Then, add the chard along with 1/4 cup liquid (water, wine, Homemade Stock), and cook for 2 minutes. If you prefer the chard more tender and more wilted, use the spatula to flip the mixture so that beans are on top and chard is touching the pan. Just keep this in mind: The longer you cook the chard, the fewer nutrients it will retain... so only cook the chard as long as you must!

Sprinkle the dish with coarse sea salt, Herbes de Provence, and black pepper; squeeze lemon juice over the top and serve while still hot.

Give it a try tonight and you'll find this is simply fantastic!
