A Gluten Free Gigi How-To: Slow Cooker Recipe ~ Naturally Gluten Free Creamy Butternut Squash Soup 01/24/2012
It’s soup weather and Staple Recipe #2, Homemade Stock (click here for the recipe), continues to come in handy at my house. My latest “souper” recipe using homemade stock is Creamy Butternut Squash Soup. It’s naturally gluten free, super-simple to make, and an absolute hit with my entire family, although they accuse me of using it as a trick to get them to eat squash. Moi?? How could I know they would help themselves to the satisfying, healthy (nameless) concoction I left simmering in the slow cooker while I delivered last week’s weight loss webinar? (Never mind the bowls, spoons, ladle, and note I left beside the slow cooker...) Trick or no trick, everyone at my house raved about this velvety soup. Still thinking about it the next day, Little Chef asked, “I wonder how that soup would be if you added chicken next time?” Next time?! Confirmation this recipe was a HUGE hit, considering getting kiddos to eat veggies is a bit of a challenge at my house! Perhaps that variation will show up on my Super Bowl party menu. Naturally Gluten Free Creamy Butternut Squash Soup Slow Cooker recipe Gluten free, vegan (if you use vegetable stock), soy free, nut free 2 – 3 pound butternut squash, peeled and cubed 1 pound apples, peeled and cubed (I used Empire apples for their flavor, because they are terrific cooking apples, and because they do not have an excessively high water content.) 4 cups chicken or vegetable stock (either store-bought or homemade; use vegetable stock for vegan) 1 cup coconut milk creamer (use any milk or cream you like, dairy or non-dairy) 2 Tablespoons pure maple syrup (honey or agave would also work, or you may omit sweetener) 1/4 teaspoon salt 1/4 teaspoon cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon allspice Add squash, apples, and stock to your slow cooker. Cook 4 hours on low (2 hours on high). When fruit is tender, reduce slow cooker temperature to “warm” setting. Use an immersion blender to puree the squash and apples right in the slow cooker. Fun! Gluten Free Gigi Tip! If you don’t have an immersion blender, no problem! Remove squash, apples, and stock from the slow cooker to a large bowl. Allow it to cool slightly. In batches, process it in your food processor until it is pureed. Return the puree to the slow cooker with temperature set to “low” to reheat. Continue with recipe as written. Add coconut creamer, maple syrup, and spices. Stir, cover, and heat until warmed all the way through. Serve with your favorite gluten free biscuits or my award-winning gluten free cornbread (click here for the recipe) OR you can wait until Thursday for an extra-special something I created to accompany this soup!
