Southwestern Style Slow Cooker Baked Beans

Slow cooker recipes are terrific for busy days. This dish, made with or without the addition of bacon, makes a great side dish or a hearty main course when paired with my Gluten Free Corn Bread.
Ingredients
  • 6 cups cooked Cannellini beans (white Kidney beans)
  • 1 cup thick, tomato-based salsa (Use your favorite store-bought salsa or homemdade*See "Notes" below recipe.)
  • 3 whole garlic cloves, minced
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon ground cumin (preferably ground from whole, toasted cumin seeds)
  • 3 strips all-natural artisan bacon, uncured and preservative-free, optional
Instructions
  1. Add all ingredients to your slow cooker except bacon; stir.
  2. Top beans with bacon.
  3. Cook on high for 3 hours or on low for 5 hours.

Notes:

  • For a simple homemade salsa that’s quick and easy when fresh tomatoes aren’t in season, try my Simple Salsa
  • You may also enjoy a side of Skinny Guacamole with these beans.

    Angie, This looks to be a great recipe and that it’s cooked in the crockpot makes it even better. I have to take fiber twice every day and this makes it even sweeter. I love beans and eat them several times every week. I love your daily letters and look forward to them. You’d been a Godsend to my struggle with this disease.

    I’ve been cooking crock pot meals every weekend for a while now and needed a new recipe. You always seem to be right on time for me. And your suggestion for corn bread is a GREAT idea.       I feel like I’m not even cooking most of the time when I slow cook. :)
