Let’s Get Back to Basics with an Easy, Budget-Friendly, Healthier Meal
I’m teaming up with my friends at Kroger to bring you this easy go-to meal. It’s as kind to your budget as it is your waistline. You won’t believe how tasty these 2-Ingredient Oven Crisp Chicken Nuggets are. The best part is this healthier version of a restaurant-style favorite pleases the entire family!
A Versatile Meal that Suits Your Family’s Dietary Needs
This recipe is free from gluten, dairy, soy, peanuts, tree nuts and coconut with the ingredients listed. That means there’s a greater chance everyone will be able to enjoy the healthy, nutritious meal you prepare.
Pretzels make the perfect coating because they’re flavorful and already salty, so there’s no need to add anything at all. This recipe would work equally well with regular pretzels if you don’t need to be gluten-free. I do, so I buy my gluten-free pretzels in the Natural Foods Department at my local Kroger. I definitely recommend checking out that section of better-for-you products the next time you’re in the store. You won’t believe how many Simple Truth® items are available and at a great price! I make that my first stop when I’m shopping because I usually find exactly what I’m looking for there.
Tips that make This Recipe even Easier!
Now, let’s talk about making these nuggets! There’s no required special equipment, but I want to tell you a few things that make this recipe even easier to make.
First, a food processor makes fast work of crushing the pretzels into fine crumbs. If you don’t have one, a blender would also work (use the “pulse” feature), or if you don’t have that, you can place the pretzels in a zip top bag and use a rolling pin to crush them.
Either way, you want to put the pretzel crumbs in a gallon-size zip top bag so that you can add the chicken pieces, seal the bag and toss to evenly coat them. This makes the process virtually mess-free, and again, so fast!
To further reduce the cleanup mess, line your baking sheet with aluminum foil, then spray the foil with Simple Truth® Organic Canola Oil cooking spray. The spray serves two purposes: First, it prevents the nuggets from sticking to the foil, and second, it provides just enough oil to crisp the pretzel coating on the nuggets as they cook.
Tongs are handy to remove the nuggets from the coating bag and placing them on the pan. A clean pair of tongs is also handy to transfer the cooked nuggets from the pan to a serving dish.

2-Ingredient Oven Crisp Chicken Nuggets with Honey Dijon Dipping Sauce
For the nuggets:
1 pound of Simple Truth boneless skinless chicken thighs
1 and 1/2 cups gluten-free pretzels
For the dipping sauce:
1/4 cup Simple Truth Dijon Mustard
2 Tablespoons Simple Truth Organic Honey
1 Tablespoon mayonnaise
Pinch of salt and pepper
Pinch of garlic powder
For the nuggets:
Preheat your oven to 400F and line a large baking sheet with aluminum foil. Spray foil-lined pan with Simple Truth Organic Canola Oil; set aside.
Place pretzels in food processor and pulse until the pretzels are reduced to fine crumbs. (Alternatively, use your blender or place pretzels in a zip top bag and use a rolling pin to crush.) Place pretzel crumbs in a gallon-size zip top bag and set aside.
Rinse chicken and pat dry. Place chicken on a cutting board and cut into bite-sized cubes. Add one-third of the chicken pieces to the zip top bag with the pretzel crumbs. Seal the bag well, then toss to coat the chicken. Remove pieces of chicken from the bag and place on prepared pan. Repeat with remaining chicken (in one-third portions). Discard any remaining pretzel crumbs and the zip top bag. Spray the chicken nuggets lightly with Simple Truth Organic Canola Oil Cooking Spray, then cook the chicken nuggets 15 minutes, or until cooked through and crisp on the outside.
For the dipping sauce:
While the chicken cooks, you can stir together the dipping sauce by whisking all ingredients together in a small bowl. Refrigerate sauce until ready to serve.
When chicken is cooked completely, transfer carefully to serving plates and serve with sauce.
