When “fluff” is used to reference a dessert, as in this Banana Split Fluff, it means sweetened condensed milk and whipped topping are involved. At least that’s true where I’m from in the South. Have you tried a fluff before?
When my girls were very young and time for baking was short, I made a cherries jubilee fluff when we had guests – it was always a hit. In summertime, I favored a blueberries and cream version.
This year, I was sitting in a talk listening to Today Show nutritionist, Joy Bauer, and thought of this idea for a twist on a fluff dessert. Sorry, Joy, I know you were supposed to inspire the healthiest of thoughts, but this is what I was thinking about when you were talking about not eating sugar. ;-)
And speaking of healthy eating and avoiding sugar *most* of the time, you know I recommend we all do; however, I also recommend enjoying foods you love on occasion. Make a fluff a couple times each year, invite some friends over, have a serving, move on. A little of this dessert goes a long way in terms of sweetness, so a little will definitely do!

Banana Split Fluff
1 can sweetened condensed milk (use regular or dairy-free)
1 tub whipped topping (like Cool Whip or a non-dairy brand like CocoWhip, which is what I use), thawed
20-ounce can crushed pineapple in its own juice, very well drained (save the juice for another use or freeze in ice cube trays for blending into smoothies or to chill a cocktail!)
1 cup diced fresh strawberries (additional for garnish, if desired)
2 bananas (medium-ripeness; if they are over-ripe they will get mushy), sliced
1/3 cup mini chocolate chips (additional for garnish, if desired)
Fresh mint sprigs and/or maraschino cherries, optional garnishes
In a large mixing bowl, stir all ingredients together, EXCEPT banana slices and garnishes.
Cover and refrigerate until ready to serve; fold in banana slices just before serving; garnish as desired.
Alternatively, spoon into individual serving dishes, layer with sliced bananas and strawberries and top with a few chocolate chips and a cherry. Cover and chill until ready to serve.
