This Healthy Avocado Tuna Salad is perfect if you’re not a fan of mayo. While I don’t mind mayonnaise at all (I even tell you about my favorite “clean ingredient” store bought mayo here, and I share my simple 2-Minute Mayo recipe here), some folks just can’t stomach the stuff.
That doesn’t mean they have to miss out on enjoying nutritious tuna salad, though. This recipe takes traditional tuna salad and substitutes mashed avocado for mayo. Avocado provides loads more nutrition than mayo, plus, just like mayo, the mashed avocado helps bind the salad together.
Try this for your next lunch or even for a simple dinner with a bowl of soup.
Healthy Avocado Tuna Salad
2 cans tuna
1 ripe avocado, peeled and pit removed
¼ cup grated carrot
2 tablespoons minced red onion
Juice from ½ lime
¼ teaspoon garlic powder (optional)
Salt and pepper to taste
Drain tuna and place it in a bowl; break up chunks with a fork.
Add avocado to tuna; mash avocado and stir into tuna.
Add remaining ingredients and stir to combine.
Serve immediately or chill prior to serving, if desired.
Make a sandwich using gluten-free bread, spinach leaves and pickles; or serve on a bed of greens, stuffed in a tomato or however you like!
