Gluten-Free was Only the Beginning
For me, beginning my gluten-free diet in 2007 as treatment for celiac disease was only the start of dietary changes.
Although I felt better than I had my entire life after only three days on my new gluten-free diet consuming naturally gluten-free foods (lean proteins, fruits and veggies, nuts and seeds – no packaged foods), going gluten-free was not the only dietary change in store.
After two months on my gluten-free diet, I experienced a severe reaction to almonds. I quickly learned all tree nuts elicited the response.
